It was impossible to escape the Woolworths TV commercial featuring Margaret Fulton and her ‘cherry Pavlova’ prior to Christmas. It seemed to be on every TV ad break and started to drive me nuts. In the end I decided to make the damn thing for Christmas dinner to see if it tasted as good as it looked.
I know it has been quite a bad year for cherries, due to the inclement weather, but I’m sure thousands of other people had also been tortured by Margaret and her Pav and come to the same conclusion as me to give it a try, as it was quite difficult on Christmas Eve to get decent large cherries. Lots of places were sold out, including ironically my local Coles (not Woolworths) and I ended up going to about four fruit markets before I eventually struck gold.

Although, I actually used my tried and trusted Stephanie Alexander recipe for the (not Margaret’s). Stephanie’s recipe differs with the inclusion of cornflour. It always turns out perfect and is so easy to make. My version used only 4 egg-white, so I therefore halved the recipe for the cherry sauce and required only 500g cherries (not 1 kg) as the topping.
The result. It looked spectacular and tasted nice, but as far as our family is concerned, you can’t beat just whipped cream and fresh passionfruit on top of a Pavlova – sorry Margaret.
