I recently attended a Gluten Free products show and came across these packs of crumpets.  At the show, they tasted just like real gluten crumpets and even looked the same.  My version, turned out not so professional.

The instructions were easy to follow, however I realised as I started to cook them, that I didn’t have the right size egg rings.  So mine were a little too small. Also, they weren’t non-stick so the mix kept sticking to the rings.

I couldn’t quite get the holes in the crumpets to form as well as those I tried at the show but decided that wasn’t so important so long as they tasted ok.

In the end, I ditched the egg rings made a kind of free-form pikelet out of them.

After cooking, they are toasted in a normal toaster and covered in butter & honey tasted pretty good, even my pikelet variety.

They freeze really well and can go from freezer straight to the toaster.

I’ll would make them again, and maybe try to get the right egg rings.   They made a nice change from GF bread for breakfast.
