I recently made this impressive looking Apple and Almond Cake. I found this in the Fare Exchange section of Gourmet Traveller magazine. Click here for recipe. I’d been holding onto the recipe for ages and following an excursion to Darlington Organic Food Market, I picked up a bag of organic apples of various varieties.
Obviously this one is not for the diet conscious when you see the list of ingredients, but it did taste very good (everything in moderation as they say). It is a very moist cake and more like a dessert when served with ice-cream or a dollop of thick double cream. It was still fresh after 5 days too (if you can manage to keep it that long).
