My friend has been telling me about her elderly Italian neighbour who makes the most divine Asparagus Lasagna. She has been trying to get the recipe but so far no luck. After raving about it so much, providing commentary like ‘its the best thing they have even eaten’, I’m now obsessed with wanting to try this special recipe too !
Build it and they will come as they say. A few weeks later, by strange co-incidence, Jamie Oliver made an lasagna with asparagus on 30 Minute Meals.
Jamie included peas, broad beans as well as asparagus. Fabulously instead of bechamel, he made the filling gluten-free by using cream and cottage cheese.
I omitted peas – as I detest them – and instead increased the broadbeans.
It was a really delicious and easy to make. As I used gluten-free dried lasagna sheets instead of the fresh pasta sheets, I had to bake for 45mins – so it wasn’t a 30 minute meal.
