I have a new favourite gluten free bread mix ! I still love the Real Bread Mix from Springhills which I have blogged about before in very glowing terms. However its great to mix it up and have more than one good tasting option … a big yay to that !
This bread mix requires 10mins kneading time. Not hard work and not long, it just means instead of standing there with the handheld mixer, you get your hands dirty. The instructions come with a handheld mixer option, but I’ve kneaded by hands each time. Crazy as it sounds, I like the fact that I’m in parting the energy from my hands into the dough and so feels like it might taste better that way.
Anyway, Simply Wise is now being stocked in Coles supermarkets but check the website for other stockists. It costs a little more than the Springhills mix.
Also you might like to check out the video clip before you make the bread to give you an idea of what you need to do. I found it very helpful.
This loaf is more like traditional ‘white’ bread than the Springhills mix. I’ve used it very successfully to make fresh bread crumbs for chicken schnitzel. It also makes GREAT toast.
